How do you make roast potatoes go crispy?

Dear Sheila,
To make the perfect roast potato, I use duck fat. That’s not practical for most people, but it’s still easy to make a great roast potato. Firstly, preheat your oven so it’s really hot – 200°C or higher is ideal.
Par-cook your potatoes until the edges turn fluffy, then drain in a colander, add a tablespoon of arrowroot, and salt and pepper.
Toss the potatoes until fully coated in the arrowroot and seasoning. Put them in the oven with a good oil or fat, or cook in the same pan as your roast.
