About apricot salad

A friend of mine from the US emailed me to say she was making apricot salad for Thanksgiving this year. What on earth could this be? I’ve never heard of it in my life.
Apricots are out of season now in the US, so chances are she’s using dried or canned fruit to make this oddly named but interesting dish – which is clearly more of a dessert than a salad. It’s usually made with apricot nectar, canned apricot gelatin and cream cheese. Sometimes pineapple is added too. A quick browse online and you will nd any number of apricot salad recipes, so why not give it a go? You could pretend it’s Thanksgiving Day here on November 22 too!
