Zesty lime oysters

Ready in 10 minutes, serves 4.
- 1 tsp finely grated lime rind
- 3 tbsp fresh lime juice
- 2 tsp caster sugar
- 2 tbsp fresh coriander leaves, finely chopped
- 1 tbsp fresh mint leaves, finely chopped
- 1 tsp fish sauce
- 16 fresh oysters
1. Combine all the ingredients together, except the oysters. Mix well.
2. Place oysters on a platter and spoon mixture over the oysters.
3. Season with salt and pepper, then serve.
Cook’s tip:
Less is more when it comes to fresh oysters. Have the confidence to mix these ingredients as you wish. Take out the coriander if that will not work for your dining companion and add a little fresh chilli if you want to spice things up.
