Very quick lasagne

The topping of this lasagne is high in fat. For a lower-fat option, choose lite sour cream and a low-fat cheese such as Edam.

400g packet fresh egg lasagne sheets
500g mince
1 onion
2 cloves garlic
737g jar tomato and basil pasta sauce
500g pot sour cream
1 cup grated tasty cheese
¼ cup grated Parmesan cheese

Cut three pieces from lasagne to fit a 30 x 20cm ovenproof dish. Grease base of dish. Place mince in a frying pan and cook, turning often, until brown. Peel onion and chop finely. Crush garlic, peel and chop finely. Add onion and garlic to mince and cook for five minutes. Add pasta sauce and combine. Place one sheet of lasagne over base of dish. Divide mince mixture into three equal portions. Place one portion of mince over pasta. Continue layering dish with pasta sheets and mince, finishing with mince. Beat sour cream and tasty cheese together. Spread over mince mixture. Sprinkle with Parmesan cheese. Bake at 200 degrees C for 40 minutes or until golden and bubbling.

Over the Teacups

My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

Water you want?

I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone

Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
