1 cup long grain rice
11/2 cups vegetable stock
2 eggs, lightly beaten
Salt and freshly ground black pepper
500g pumpkin, chopped into 1cm cubes
2 spring onions, finely chopped
100g feta cheese, crumbled
2 tbsp fresh thyme leaves
1. Preheat oven to 180°C. Spray a 17 x 27cm slice pan with oil. Rinse rice well under cold running water. Place stock in a saucepan and bring to the boil. Stir in the rice, cover, then cook over a low heat for 12 minutes or until the rice is tender and the vegetable stock has been fully absorbed.
2. Remove the pan from the heat and stir the two beaten eggs into the rice. Season with salt and pepper and set aside for 5 minutes to cool a little. Press rice into the base and sides of the prepared tin and then bake for 15 minutes to set the crust.
3. Steam pumpkin for 10 minutes to soften, then season with salt and pepper. Scatter spring onion and pumpkin on the rice crust and sprinkle with crumbled feta and thyme leaves. Bake for 30 minutes or until golden.

Over the Teacups
My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

Water you want?
I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone
Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
