Salmon and courgette tart
Makes 1 tart
1 pre-rolled sheet puff pastry
2 tbsp basil pesto
210g salmon, drained and broken into flakes
1 large courgette, finely sliced
Salt and freshly ground black pepper
Fresh basil leaves, to garnish
1. Heat oven to 200�C. Place pastry sheet on an oven tray. With the tip of a sharp knife, score a 1cm-wide frame around the edges of the pastry square. Prick the the central square of pastry, but not the frame, all over with a fork.
2. Spread pesto evenly over the central square of pastry, taking care not to cover the frame. Cover pesto with flaked salmon, then randomly arrange the sliced courgette on top. Season with salt and pepper.
3. Bake for 15 to 20 minutes or until pastry frame is puffed and golden brown. Remove to cool. Scatter warm tart with basil leaves to garnish. Serve immediately.
Tip: This simple pastry tart makes a great base for a variety of different toppings. You can use shaved ham, tuna, salami or sliced smoked chicken instead of the canned salmon.

My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

Water you want?
I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone
Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
