Rose petal cooler

Ready in 20 minutes, serves 8.
- 6 organic roses, petals removed
- 1 cup sugar
- 2 tbsp rose water
- 2 litres sparkling mineral water, chilled
- Crushed ice
1. Place rose petals, sugar and 1 1/4 cups water in a large saucepan. Bring to the boil. Reduce heat and simmer for 8-10 minutes. Cool.
2. Stir in rose water.
3. To serve, fill glasses with crushed ice. Pour syrup into glasses and top with sparkling mineral water.
Tip: You can substitute sparkling mineral water with a budget sparkling wine.
