Rice wraps with prawns and lettuce

100g vermicelli noodles
½ cup fresh mint leaves
½ cup fresh coriander leaves
250g shelled cooked prawns (about 72)
2 tablespoons lime juice
1 Lebanese cucumber
18 rice-paper wrappers

Place noodles in a large bowl and pour over boiling water. Leave for five minutes. Stir occasionally to separate noodles. Drain and refresh under cold running water. Drain well. Wash mint and coriander leaves. Drizzle prawns with lime juice. Wash cucumber and slice finely lengthways. Dip a rice-paper wrapper into a shallow dish of warm water until just soft. Place on a clean bench. Place a few noodles, herbs, four prawns and a slice of cucumber in the middle of each wrap. Fold wrapper around prawn mixture to form a parcel. Repeat with remaining wrappers and prawn mixture. Cover rolls with a damp tea towel until all have been completed. Dip in sauce to eat.

Sauce
1 cup sweet chilli sauce with ginger
2 tablespoons soy sauce
¼ cup lime juice

Mix chilli sauce, soy sauce and lime juice together.

Over the Teacups

My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

Water you want?

I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone

Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
