I featured a banana dressing in this column a year ago, but I was reunited with the idea at a friend’s house.
She had made this delicious salad she says originally came from a recipe by Hudson and Halls, whose popular TV cooking show ran in the late 70s and early 80s. This is a divine salad even kids will enjoy, so give it a go and don’t forget to serve chilled.
- 1 Chinese cabbage (you need a good peppery taste)
- ¼ cup mashed banana
- ¼ cup mayonnaise
- 1 tbsp lemon juice
- 2 tsp fresh grated horseradish
- ½ tsp sugar
- ¼ tsp salt
1 Mix together to a stiff gummy paste. Thin with extra mayonnaise and lemon juice if it is too thick. Put in the fridge to chill.
2 Just before serving, finely slice the cabbage and dress with the banana dressing. Must be served cold.
