Pasta salad

350g pasta shells
1 tbsp olive oil
3 chorizo sausages, sliced
1/2 cup kalamata olives
1/2 cup sundried tomatoes, roughly chopped
1/2 cup cubed tasty cheese
1/4 cup chopped parsley
1 tbsp balsamic vinegar
Salt and freshly ground black pepper
2 tbsp oil from sundried tomatoes
2 tbsp olive oil

1. Bring a large saucepan of salted water to the boil and cook pasta for 8 to 10 minutes or until just tender.

2. Drain pasta and drizzle with olive oil. Shake to separate pieces. Allow to cool to room temperature.

3. Place pasta in a large bowl and add sliced chorizo, olives, sundried tomatoes, tasty cheese and parsley.

4. Mix together balsamic vinegar, salt, pepper and oils and drizzle over salad.
