Miso Marinade

Ready in 5 minutes, makes ½ cup.
This marinade is also perfect with any thick fillet of fish.
- 3 tbsp yellow or white miso (available in supermarkets)
- 1 tbsp sesame oil
- 1 tbsp caster sugar
- 2 tbsp mirin or white wine
- 1 tsp crushed garlic
- 1 tsp finely grated ginger
- ¼ tsp dried chilli flakes (optional)
1. Mix all ingredients together in a jar, cover with a lid and refrigerate for up to 1 month.
2. When ready to use, liberally coat pieces of chicken or fish, cover and refrigerate overnight.
3. When ready to cook, wash off excess marinade under cold water and dry with paper towels.
Miso is fermented soybeans and is not only incredibly good for you, but also adds a great depth of creamy flavour to your cooking. It’s available in supermarkets.
