Minted fruit parfait

Ready in 15 minutes, plus 2 hours to chill, serves 4.
The perfect finale – a hint of creamy lusciousness, fresh fruit and a little mint.
- 500g frozen passionfruit yoghurt, at room temperature
- 1 cup blackberries
- 1 cup strawberries, halved
- 1 cup fresh apricots, diced
- 2 tbsp fresh mint, chopped
- Additional mint for decoration
1. Gently combine the first five ingredients.
2. Divide the mixture into four parfait glasses.
3. Chill for 2 hours.
4. Serve with additional mint as a garnish.
