Chicken, bacon and mushroom risotto recipeThis chicken, bacon and mushroom risotto recipe is Italian inspired and serves four. If you like greens, add a handful of baby spinach at the end just before serving.


Scallop & bacon risotto with lemon thyme butterThis creamy scallop and bacon risotto with lemon thyme butter is quite filling, so serve in small portions. Serves four.


The key to this cider risotto with broad beans, asparagus, cress and cider poached chicken is to use quality Arborio rice and to plate it up fast. Serves six.

Dried shiitake mushrooms give the dish a lovely intense flavour and can be purchased at supermarkets or Asian food stores.
