These scrambled eggs are a one-dish wonder and cook in about 11/2 minutes in the microwave. Alternatively, you can cook in a pan on the stove.
For variety, add a few extras, such as chopped shaved ham, grated cheese, spring onion or chopped cherry tomatoes.
- 2 eggs
- 2 tbsp milk
- 1-2 slices shaved ham, sliced
- Parsley or spinach, finely chopped (optional)
- Sea salt and pepper, to taste
- Wholegrain toast soldiers
1 In a small bowl, whisk eggs and milk. Add ham and parsley, if desired, and season well.
2 Heat on full power for 1 minute in the microwave, then carefully remove and stir gently to break-up the egg. Cook for a further 30 seconds until the egg is just set. Serve with toast.
