1.5kg piece corned silverside, rinsed
1 onion, quartered
1 carrot, thickly sliced
2 tbsp red wine vinegar
2 tbsp brown sugar
Plum glaze
½ cup plum sauce
2 tbsp red wine vinegar
2 tbsp Worcestershire sauce
2 tbsp tomato sauce
1. Place all the ingredients in a large saucepan in the order listed, then pour over enough cold water to cover the beef.
2. Bring to the boil, then turn down the heat to a gentle simmer. Simmer beef very gently for 1½ hours. Remove beef to a carving board, pour over glaze, then slice to serve.
3. To make the plum glaze, combine all the ingredients in a saucepan and bring to the boil. Simmer for 2 to 3 minutes to reduce to a thick, jammy glaze. Pour over corned beef before slicing.
Tip: Corned beef is when whole pieces of beef have been corned or cured in seasoned brine (a flavoured salt solution). It can be purchased from butchers and is usually labelled as corned silverside.
Tip: As a rule of thumb, when calculating cooking time you should allow 30 minutes per 500g of corned silverside.
Tip: Corned beef is delicious whether served hot with vegetables on the side or cold in sandwiches.

Over the Teacups
My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

Water you want?
I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone
Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”

Fraud with worry
My daughter warned me that “old people are being taken for a ride,” and that I shouldn’t engage in conversation with phone sales people. To this, Master Five piped up, “Nana can’t go on that ride, she’s old.”
