You’ll never get the recipe for gingernuts out of Griffins (who just celebrated their 150th anniversary), but you can make your own. These are just as good as the real ones with their hard, crunchy texture and spicy taste.

  • 1 cup flour
  • 2 tbsp sugar
  • 1 tsp baking soda
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 60g butter
  • 2 tbsp golden syrup
  1. Sift the dry ingredients. Melt the butter with the golden syrup and pour into flour mixture. Mix well.
  2. Roll into balls the size of a walnut and place on greased baking trays, then press lightly with a fork.
  3. Bake in a very hot oven, around 230ºC, for 5 minutes, then reduce the oven to 180ºC and bake for a further 7-10 minutes. Cool on trays before placing in baking tins.
