3 medium size kumara, peeled and chopped
1 bag baby spinach leaves
Salt and freshly ground black pepper
1/4 cup coconut cream
3 white fish fillets, skinned and boned
3 spring onions, finely chopped
1 red chilli, finely chopped and with seeds removed
Juice and finely grated rind of 1 lemon
1 egg, lightly whisked
1/4 cup flour
3 tbsp oil
1. Cook kumara in a saucepan of boiling salted water until tender, add spinach and cook for one more minute. Drain veges well and return to pan with the salt, pepper and coconut cream. Mash thoroughly until smooth.
2. Chop fish into 2cm chunks and place in a bowl with spring onions, chilli, lemon rind and juice.
3. Mix mash with fish mixture and divide into six fish cakes. Chill fish cakes for 30 minutes.
4. Dip fish cakes in egg, then flour.
5. Heat oil in a frying pan and cook fish cakes on both sides until golden and cooked through.

Over the Teacups
My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone
Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
