2 tbsp vegetable oil, such as canola or rice bran oil
1 onion, chopped
2 tbsp red curry paste
600g carrots, peeled, trimmed and coarsely chopped
300g mashing potatoes, peeled and coarsely chopped
4 cups vegetable or chicken stock, as preferred
400g can coconut milk
Salt and freshly ground black pepper
2 tbsp chopped fresh parsley, to garnish
1. Heat oil in a large, heavy-based saucepan. Add onion and cook over a medium heat for 10 minutes to soften. Add curry paste, then stir and cook for one minute.
2. Add carrots, potatoes and stock and bring to the boil. Turn down the heat and simmer for 10 minutes or until vegetables are very tender.
3. Purée the mixture in batches until smooth, then return to the saucepan. Stir in the coconut milk over a low heat to reheat soup. Season with salt and pepper to taste. Serve in bowls garnished with parsley. Serves 4-6.
Tip: Once the coconut milk has been added, do not allow the soupto boil, as high heat can cause coconut milk to separate and the soup will curdle.

Over the Teacups
My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone
Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
