1/3 cup plain flour
Salt and freshly ground black pepper
1 egg beaten with a little milk
1 cup cornflakes, crushed
4 to 8 (depending on size) white-fleshed fish fillets, such as tarakihi, blue cod or snapper
Olive oil
Mashed potatoes, to serve
Lemon wedges, to serve
1. Season flour with salt and pepper and spread on a tray. Place beaten egg and milk in a shallow dish. Spread crushed cornflakes over another tray.
2. Dip fish fillets in flour to coat, then in beaten egg, then in crumbs, pressing well to coat in a crust of crumbs.
3. Heat a nonstick frying pan, add a little oil and pan-fry crumbed fish, in two batches if necessary, for 2 to 3 minutes on each side until golden brown on both sides and cooked through. Serve fish with mashed spuds and a steamed green vegetable.
Tip: When buying fish, take a deep breath. Fresh fish smells like the sea. If it smells fishy, it isn't fresh.

Over the Teacups
My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

Water you want?
I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone
Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
