I just spent two days mountain biking in Taupo and ate these almond power bars for energy. They also make a terrific schoolbox snack for the kids!
- 2½ cups cooking oats
- ½ cup shredded coconut
- 1 tsp vanilla paste
- ½ tsp sea salt
- ½ tsp ground cinnamon
- ½ cup dried apricots, chopped
- 2 tbsp almond butter
- 100g good quality dark
- cooking chocolate
- ½ cup raw honey
- Preheat oven to 160oC and line a 20 x 30cm baking tray with baking paper. Mix the first six ingredients in a large bowl.
- Place almond butter, chocolate and honey in a heavy-based pot over a low heat. Stir until melted. Pour over the dry mix and work quickly to combine. Press into tray and bake for 30 minutes.
- Remove from oven and allow to cool (finishing in the fridge) before cutting into bars.
