Chilli con carne

This is the ultimate bowl and fork food – tasty, filling and quick to make. Try different toppings such as cheese, guacamole, sour cream, sweet chilli sauce or salsa.

Serves at least 4

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • ½ tsp smoked paprika
  • 500g beef mince
  • 1 can peeled, chopped tomatoes
  • 1 can chilli beans
  • ¼ cup barbecue sauce
  • Fluffy white rice, to serve
  • Sour cream, to serve
  • 1-2 avocados
  • 1 chilli or red pepper, finely diced
  • Pinch chilli seasoning

1 In a heavy-based frying pan, heat the oil and saute the onion, garlic, smoked paprika and mince until lightly browned and fragrant. Add the canned tomatoes, beans and barbecue sauce and simmer for 15-20 minutes until the mixture is thick and saucy. Thin with a little water if the mix becomes too thick.

2 Serve with rice and top the bowls with sour cream and a rustic salad of sliced avocado, chilli or pepper and a pinch of spice, if you like.
