Chicken mango curry on naan bread

2 tablespoons red curry paste
600g skinned and boned chicken thighs
2 medium golden kumara
1 cup mango nectar
165ml can coconut cream
1 tablespoon cornflour
¼ cup water
4 naan breads

Place curry paste in a large saucepan. Cut chicken thighs in half lengthways. Peel kumara and cut into 3cm pieces. Add chicken and kumara to saucepan. Pour over mango nectar and simmer for 20 minutes. Add coconut cream. Mix cornflour and water together. Add to curry and cook a further five to 10 minutes, stirring often. Heat naan bread according to packet directions. Place curry on naan bread and serve with mango salsa.

Serves 4

Mango Salsa
425g can mango in light syrup
2 tablespoons chopped roasted cashew nuts
¼ cup chopped fresh coriander
1 tablespoon lime juice

Drain mango. Cut into small cubes. Place in a bowl with cashew nuts, coriander and lime juice.

My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone

Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
