Blueberry ice cream slice

Tip: Use a sharp knife to trim wafers and get a perfect fit with the ice cream. Preparation: 15min plus 8 hours to freeze. Cooking: 10min. Serves: 8

1 1/2 cups blueberries
1/2 cup sugar
1 litre vanilla ice cream
16 wafers

1. Place the blueberries and sugar in a small saucepan and bring to the boil over a gentle heat, stirring until the sugar is dissolved and the berries are soft. If you are using fresh berries, you may need to add a little water. Set aside to cool.

2. Line a 24cm loaf pan with cling film. Press half of the ice cream into the base of the pan.

3. Place the remaining ice cream in a blender with the cooled berries and juice, blend until well mixed. Pour the blueberry mixture over the ice cream base, cover with plastic and freeze for 8 hours or until firm.

4. Turn out the ice cream and slice into 8 slices. Sandwich ice cream between wafers and serve.
