Best ever toasted ham and cheddar pan sandwich

I have used two types of cheese in these man-sized toasties – the cheddar for its rich nutty flavour and the Havarti, which melts beautifully.

Remember, butter is your friend when making these sammies, if you want to achieve the intimate golden crust!

  • 8 thick slices toast bread
  • 50g butter, softened
  • 2 tbsp sour cream
  • 1 tbsp wholegrain mustard
  • 4 slices thick cut smoked ham
  • 4 thick slices Cheddar cheese
  • ¼ cup grated smoked Havarti cheese

1 Butter one side of the bread slices generously. Combine sour cream and mustard, and spread over the unbuttered side of each slice.

2 Top 4 slices with the ham and cheeses, then sandwich with remaining slices. Preheat a heavy nonstick or cast-iron pan and sear sandwich for 3-4 minutes each side over a gentle heat until well toasted and cheese begins to ooze.
