Beer and chilli burgers

Ready in 25 minutes, makes 4-5 large burgers.
This is definitely one for the boys – chilli and beer inside a delicious burger!
- 2 tbsp oil
- 1 medium onion, diced
- 1 tbsp crushed garlic
- 2 tbsp dried thyme
- 1 tbsp dried oregano
- 1kg beef mince
- 2 tbsp chopped jalapeno peppers (from a jar)
- 1 egg
- 1 cup stout or strong beer
- 1/4 cup parsley, chopped
- 1 tsp salt
- 1 tsp black pepper
- Serve with: salad, grilled onions and dab of mustard
1. Cook onion gently in a little oil for 2 minutes before adding the garlic, thyme and oregano. Cook for a further 2 minutes before scraping the onion mix into a large bowl to cool.
2. Add the beef mince to the bowl with all other ingredients except beer or stout.
3. Stir in stout or beer then use a cup measure to portion mixture. Mould mixture into patties.
4. Smear the grill with oil and cook burgers over a moderate-high heat on each side until cooked through – approximately 5 minutes on each side.
Cook’s tip:
Make these burgers a day or two ahead if you can as the flavours will improve. If you want more than a mild heat, double the quantity of jalapeno peppers.
