3 tbsp olive oil
1 onion, coarsely diced
2 carrots, peeled and diced
4 sticks celery, diced
2 lamb shanks
1 cup pearl barley
2 bay leaves
Salt and freshly ground black pepper
1. Heat a large saucepan, add oil, onion, carrot and celery and cook over a medium heat for 10 minutes to soften without browning. Remove vegetables to one side.
2. Turn up the heat and add lamb shanks to brown all over. Return vegetables to the pan, add barley and bay leaves and generously cover with cold water.
3. Bring to the boil, then turn down the heat and simmer, uncovered, for 1½ hours until meat is falling off the bone and barley is tender.
4. Remove bay leaves and bones, returning any shreds of meat to the saucepan. Season with salt and pepper to taste.
Tip: Soup will last well for up to four days if covered and stored in the fridge. Make the soup at least one day in advance of eating as you will find the flavours improve upon standing.
Tip: Store dry barley in an airtight container in a cool, dry place.

My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone
Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
