Banana bread

A busy mum said this banana bread was a huge hit with her son, Zach, whose favourite treat is two slices of it coated with a generous smear of spreadable cream cheese and topped with fresh berries.

  • 4 very ripe bananas (approximately 1¼ cups)
  • ¹/³  cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1 tsp baking soda
  • Pinch of salt
  • 1½ cups flour

1. Preheat the oven to 180C

2. Spray a 25 x 15 x 8cm loaf tin with cooking oil and line with baking paper.

3. In a large bowl, mash up the banana with a fork. Add in melted butter.

4. Mix in sugar, egg and vanilla. Sprinkle baking soda and salt over the mixture, then sift in flour.

5. Pour mix into the loaf tin and bake for 50 minutes.
