Baked cheesy corn

Ready in 50 minutes, serves 4-6.
This fabulous recipe is bound to become a favourite at barbecues. Plus, the entire dish can be made for under $10.
- 2 tbsp butter
- 1 clove crushed garlic
- 4 tsp flour
- 3/4 cup milk
- 2 cups grated cheese
- 1/4 cup cream cheese
- 2 cups frozen whole kernel corn, thawed
- 1/2 cup diced ham
1. Preheat oven to 180°C.
2. Melt butter and add garlic. Wait 10 seconds, then stir in the flour.
3. Add milk. Cook, stirring constantly, over a medium heat until mixture is thick and bubbly.
4. Stir in cheese and cream cheese, then cook over a low heat until melted. Stir in corn and ham.
5. Pour mixture into a 1.5-litre oven-proof dish. Bake for 20 minutes until top is browned.
Cook’s tip:
For vegetarians, simply omit the ham. You can add chopped chives or parsley if desired.
