Bacon and mushroom penne

350g dried penne pasta
2 tbsp olive oil
1 onion, finely diced
250g rindless bacon, diced
250g button mushrooms, halved
1 tbsp plain flour
1/3 cup red wine
2/3 cup chicken stock
2 tbsp lite sour cream
1 tbsp chopped fresh oregano
Salt and freshly ground black pepper

1. Cook pasta in plenty of boiling, salted water for 10 minutes or according to packet instructions until just tender to the bite.

2. At the same time, heat oil in a large frying pan, then add onion, bacon and mushrooms and stir-fry to lightly brown. Stir in flour and cook for 1 minute.

3. Take the pan off the heat, add wine and stir until mixture is smooth, then stir in stock. Return to the heat and cook for 3 to 4 minutes, stirring continuously until sauce thickens.

4. Stir in sour cream and oregano and season with salt and pepper to taste. Drain cooked pasta and add to prepared sauce. Toss well and serve.

Tip: Pasta should be cooked until al dente, which means firm to the bite. To stop cooking at the correct stage, start tasting the pasta two to three minutes before the end of the cooking time. Before draining the pasta, reserve 1 to 2 cups of the cooking water – this contains starch from the pasta that can add body to sauces.

My four-year-old grandson was at the supermarket with his mother when he exclaimed, “You’re buying something, Mummy, auntie is buying something – I want to buy something!” Mum replied, “You have to be big, have a wife, have a job, then you can buy things.” He replied, “I have a wife – Maia,” meaning his four-year-old friend. Mum said, “What about a job?” Master Four replied, “My job is having a wife!”

I was in the car and asking Master Three what he wanted for Christmas. He said he was going to ask Santa for a water pistol. “And Nanny,” he added, “I’m going to ask for some water for our paddling pool.” Now that could be interesting!

Bee gone

Master Three had his first bee sting recently. The incident broke his heart, but after many cuddles he came right. Later he said, “I never want to see another bee again. I don’t like bees any more, I only like flies.”
