Prune and banana pie recipe

Most families have a favourite dessert which gets passed down from family to family, to be enjoyed over and over again. In my family, it is the self-saucing chocolate pudding I have written about before. In Mrs UB Braxton’s family it is this delicious pie.

Mrs Braxton from Tauranga sent me the recipe to share with my readers saying, “This was my nana’s recipe and then my mother’s and now I specialise in it. It is always a great hit.” This is a real treat and is very rich, but is an absolute success in my house. The flavours of the prunes and bananas blend so well together.

Pastry shell
Use sweet short pastry. Roll out, then place in a greased pie dish. Get a fork and prick the bottom of the pastry all over, then blind bake in a 180ºC oven. It should be nice and golden in 20 minutes.


  • 2 cups pitted prunes, chopped
  • 2 cups ripe banana, sliced
  • 1 tsp lemon rind and 1 tsp lemon juice (Mrs Braxton uses lemon essence but I couldn’t find any)

1. Melt together 4 tbsp of honey with 2 tbsp of butter.

2. Pour this mixture over the prunes and bananas, and mix well together.

3. When the pastry is cooked, take out of the oven and pour in the filling.

Meringue top

  • 2 egg whites
  • 1 tbsp cornflour
  • 1/2 tsp vanilla essence
  • 3 tbsp caster sugar

1. Beat all the ingredients together until soft peaks form on the end of your beaters.

2. Spread this mixture gently on top of the pie.

3. Put the pie back in the oven and bake until the meringue is just colouring. Serve with ice-cream, whipped cream or yoghurt.
