How to glaze fruit tarts

I love those pretty little fruit tarts with the shiny surface that are for sale at some cake shops. I’ve tried doing the same thing using bought tart cases, fruit and custard, but I’m not sure how to make them so glossy.
I think you’ll find that these sorts of places “glaze” their tarts. To do this you’ll need jam in the same or a similar flavour to the fruit you’ve used. Mix the jam with some water and bring it to the boil, strain it to get rid of any pips and skin, then brush the remaining liquid onto your tarts.
