I’ve always been surprised at just how nervous people get around tofu. It’s a great product – very healthy and versatile. It’s made from the extract of soya beans – you might see it referred to as soya cheese. It’s not tasty in its own right, but works well if you add other flavours. Add tofu cubes to a vegetable stir-fry with hoisin sauce and chopped nuts. Or, fry slices of tofu and serve it in a bun with tomato, lettuce, mayonnaise, relish and beetroot for a flavour-packed vegetarian burger.
