We seem to have an endless programme of barbecues and shared meals to go to over the next few weeks and because I work full time there isn’t much scope for me to come up with innovative dishes to impress my friends. What’s a fail-safe, economical, vaguely sophisticated plate I can whip up easily?
Pasta is your friend when it comes to this time of year. With a vast range of pestos, chutneys and dips available in our supermarkets, you can whip up something quick and clever without going to too much trouble – as I advised our farmer at left. As a basic suggestion, cook some pasta, cool, and add halved cherry tomatoes, bought or homemade pesto mixed with quality mayonnaise, and maybe throw in some pine nuts. Chopped salami or chorizo sausage can also be added.
