Olive tree usage

I’ve got lots of olives on my tree, but they’re not very nice as they are. What can I do with them?
You don’t eat olives straight off the tree. Put them in water and drain daily for 10 days.
Then leave them in a salt brine for a week before straining and placing them in another one. Do this every week for a month till they taste good. Pasteurise them by bringing them up to the boil, then cool and put them in a jar for three to six weeks, or until tasty.
