Creating the perfect wilted spinach all depends on the timing.

Do you have any tips on how to wilt spinach correctly? I keep ending up with a bland, soggy mess that no-one in the family is too keen on finishing!

I suspect you may just be leaving your spinach in the pan for too long. Next time, heat around 20ml of extra-virgin olive oil in a saute pan until it has come to a simmer. Throw in 300g of fresh, washed spinach and cook for only a minute. Season with the juice of a lemon and a large pinch of salt, then immediately serve on warmed plates.
