How do you prepare beetroot for baking as a roast vegetable?
There are several ways to prepare beetroot for roasting. Large beetroot can be cooked whole, then peeled and cut in large chunks and roasted. or, if you prefer to leave the skins intact, scrubbed medium-sized beetroot can be cut in wedges and roasted. or, trim the stalks from scrubbed, unpeeled baby beetroot and roast them whole.
To roast, place pieces of beetroot or whole baby beetroot in an oven pan, drizzle with a little olive oil, season with salt and pepper and toss well. Roast for 15 to 25 minutes (depending on the size of the pieces) or until the skins caramelise.
